Jun. 21st, 2014 12:49 amFernando again underestimating how much work to be done... He told me on the phone when we talked that there was only a little prep to do, but between me, him and Uzziel we were working for at least 7-8 hours yesterday. I guess he is officially ~Chef Fernando~ which we found kind of hilarious. One of the new staff was like, "bye Chef!" when she left and we were all like "lol you're the big chef now, Fernando!"
It was good to work with them again though. I missed being the butt of every joke, being called a traitor and a spy, and "coming true to the game."
Today was opening night and at first it was dead, and then at 7 people started coming in, and we were working straight up to 9. Not overwhelming, just busy in the good way. I was able to keep my board perfectly clean the whole time. Things went super smooth too, no significant mistakes on food or service. We did 2300 tonight, not bad. That's twice what the Bistro makes on a busy night, and we were dead for most of it. All the management was super nervous, but we made a lot of money and everybody was still happy at the end of the night, so I'd call that a success.
